If you are a beginning gardener, you will want to start with the hardiest and simplest vegetables to grow. Contrary to what many people think growing vegetables really isn't as easy as it seems. To do it well you will need to consider things such as soil pH levels, moisture, sun exposure and even how deep you plant the seeds. So for starters, it is highly recommended that you actually start off with a batch of herbs such as rosemary, thyme, basil and mint. Growing tasty and healthy vegetables is actually quite a bit of work to do well. That being said, there are some more hearty varieties of vegetables out there that present less effort to grow well. The first thing to consider is root vegetables such as carrots, onions, garlic, beets and potatoes. Unlike other vegetables, they don't require daily care and can grow well in a moderate climate without much in terms of maintenance. The next thing to consider is kale. Kale is incredibly easy to grow and is also one of the most nutritious leafy vegetables out there. Even with these two categories of vegetables, you have the makings of a delicious salad or side dish.
